Michel Roux Jr., the two-Michelin-starred chef and former MasterChef judge, is spearheading a £20 million expansion of Crossbasket Castle, a luxury hotel and restaurant near Glasgow, Scotland. Slated to open on March 16, 2025, the project introduces a new dining establishment, Trocadero’s Restaurant and Cocktail Bar, alongside a significant expansion of the existing hotel. Trocadero’s promises a sophisticated experience with fine dining, specialty cocktails, and live entertainment, marking Roux Jr.’s second culinary venture within the castle grounds. He currently oversees Michel Roux Jr. Restaurant at Crossbasket Castle, which features a menu of French cuisine crafted with local Scottish ingredients and a traditional afternoon tea service.

The ambitious expansion, driven by castle owners Alison and Steve Timoney, adds 40 new bedrooms to the hotel, including two grand suites, four junior suites, eight deluxe rooms, and 26 classic double/twin rooms. Beyond the hotel expansion, the project also includes the addition of two private cottages and a luxurious spa, further enhancing the appeal of the 14-acre estate. The development is projected to increase guest capacity by 35,000 annually and create 50 new jobs within the local community. This expansion follows a previous £10 million restoration of the 17th-century castle undertaken by the Timoneys after acquiring the property in 2011. The hotel and restaurant initially relaunched in 2016.

His television career includes a prominent role as head judge on MasterChef: The Professionals from 2008 to 2013, alongside Gregg Wallace and Monica Galetti, before being succeeded by Marcus Wareing. He also presented Netflix’s Five Star Chef in 2023. He comes from a distinguished culinary family, with his father, Albert Roux, and uncle, Michel Roux Senior, both recognized as influential figures in the industry.

The Crossbasket Castle development stands in contrast to the recent closures of several restaurants owned by another Michelin-starred chef, Nacho Manzano. Manzano’s Spanish restaurant chain, Ibérica, entered administration earlier this month, leading to the closure of locations in Leeds, Canary Wharf, and Marylebone. The closures highlight the challenges facing the hospitality sector, including post-pandemic recovery, staff shortages, escalating costs, and reduced consumer spending.
